Feeling fruity salad – the king of quick desserts
If you’re short on time and love fresh fruit, a fruit salad platter offers delicious simplicity. Gather together your favourite fruits, place on a tray of ice and have cream or ice cream as a topping. Delish!

Raspberry Sorbet – one of the tangiest quick desserts for 2
If you’ve had a particularly heavy meal, a light and refreshing dessert is in order. This Raspberry Sorbet makes a lip smackingly good option, as it offers the perfect blend of sweet and tart. It’s also one of the best quick deserts for 2 as it only takes a few minutes to prepare.
Ingredients
200g granulated sugar
600g raspberries
1 lemon, juiced
Method
Place the sugar and 260ml water in a saucepan and simmer over a low heat until the sugar has dissolved.
Raise the heat until the liquid becomes a syrup and set aside to cool.
Blitz the raspberries and lemon juice in a food processor until smooth.
Strain through a fine sieve and combine with the sugar syrup.
Pour into a freezeproof container and place in the freezer for at least six hours.
Try and stir the sorbet every hour or so to remove ice shards.
You can stop mixing when the sorbet has the right consistency – icy yet scoopable. Scrummy!

Classic Crème Brulee – one of the creamiest desserts for 2
There’s nothing more satisfying than smashing through the crunchy caramel on the top, to find creamy goodness underneath. Crème brulee one of the scrummiest quick desserts for 2 that you and your partner will find utterly irresistible.
If it’s the height of summer and you’re worried about the crème brulee turning into a melty mess, place the ramekin on a bed of ice to keep it cooler for longer.
Ingredients
3X egg yolks
65g golden caster sugar
240ml double cream
1 tsp vanilla bean paste
A pinch of salt
Method
Preheat the oven to 150°C and put two large ramekins into a deep baking tray.
Boil the kettle.
Tip the egg yolks into a big heatproof bowl with the sugar and a pinch of salt, and whisk until pale and fluffy.
Put the cream and vanilla in a small pan over a low heat. Pour the cream in slowly, whisking constantly.
Strain the custard through a fine sieve into a Pyrex jug, spooning any foam away from the surface. Divide the custard between the ramekins and pour water into the tray so it reaches half way up the ramekins.
Cover loosely with foil and put into the oven for around 35 minutes, or until the custard is set.
Remove from the oven and cool, before leaving to set for 4 hours.
When you’re ready to serve, sprinkle some golden caster sugar on the top and use a kitchen blowtorch to caramelise the tops.

Ginger and rum cake – big on flavour, heavy on rum
If a boozy cake is up your street, you must try this ginger and rum cake. Although you might feel like a bit of cheat for using a ready-made ginger loaf cake, don’t! It’s one of the most delicious, quick desserts for 2 that provides the ultimate pleasure. Just remember to prepare it a few hours ahead of your event, as it takes some time to set.
Ingredients
1 McVitie’s Jamaica Ginger Loaf Cake
500ml double cream
5 tbsp dark rum
8-10 tbsp of Bonne Maman Salted Caramel
3 balls of stem ginger in syrup
2 tsp. syrup from the ginger jar
Method
Cut the Jamaican ginger cake horizontally into 3 long layers
Put the cream, 3 tbsp of rum and half the caramel into a bowl and whisk until you have stiff peaks
Place a layer of cake onto a serving dish and brush with some of the remaining rum
Spread over the caramel and then some of the cream, before layering with cake and doing the same again.
Use the rest of the cream to completely cover the cake and chill for three to four hours, or overnight.
When you’re ready for your dessert, cut into slices and enjoy!

Ingredients
Vanilla ice cream
Espresso coffee
Vanilla flavoured syrup
Method
Put two balls of ice cream into each bowl.
Add a shot of hot espresso coffee to each one.
Drizzle syrup on top and stir slightly. Delicioso!
