You all know how much we love an iced latte here at Polar Cube, but have you ever tried a Blueberry Iced Latte? This one is perfect for those mid morning caffeine cravings with the familiar taste of a fluffy blueberry muffin.

x 80gFrozen Blueberries
x 2tbspBrown Sugar
x 1/2 tspVanilla Extract
x 1 handfulPolar Cube ice
x 175mlMilk
x 60mlEspresso
Top with:Whipped Cream
Method
1.Add the frozen blueberries, sugar and vanilla extract to a pan on a medium high heat. Cook for 3 minutes or until the blueberries are breaking down and the mixture is smooth, then set aside to cool.
2.Once cooled, add the compote to a blender and pulse until smooth. Brew your espresso and set aside. Layer 2tbsp of the blueberry compote in your glass before filling with Polar Cube ice.
3.Add the milk to the glass with the espresso, stirring to combine. Top with the whipped cream and a few spoonful's of the leftover compote to serve. Enjoy your blueberry iced latte!
