It's Pancake Day and we're celebrating in true Super Cubes style, with Gin & Tonic pancakes of course! Serve as a delicious dessert alongside an ice-cold G&T or a tasty garnish in your copa glass instead!

x 2250ml Cans of Gin & Tonic
x 4tbspCaster Sugar
x 1Lemon (juiced)
x 200gSelf-Raising Flour
a pinch ofsalt
x 3Super Cubes
x 50mlYour favourite gin
x 200mlTonic Water
Garnish:Fresh Berries & Miniature Pancakes
1.For the G&T Syrup, add one 250ml can of gin and tonic, the juice of a lemon and 2tbsp caster sugar into a saucepan and reduce until thickened to a syrupy texture. Set aside to cool.
2.For the pancakes, combine 200g Self-raising flour, an egg, 2 tbsp caster sugar, a pinch of salt and a 250ml can of gin and tonic. Whisk until smooth. Add two dollops of the mixture to the pan to create 1 pancake, cook for 1-2 mins on each side. Add a few smaller dollops to create mini pancakes for your drinks garnish. Repeat with the remaining mixture.
3.Fill a glass with Super Cubes and add your favourite gin and tonic. Stack up your pancakes and pour over your G&T syrup. Garnish your pancakes and gin with fresh berries, and add your miniature pancake stack to your gin glass to serve. Enjoy your gin and tonic pancakes!
