Ingredients

x 1 handful Polar Cube ice
To make the infused spirit: x 1 70cl Gin/Alcohol free gin and 30 dried butterly pea flowers
x 45ml Infused Gin/Alcohol free gin
x 120ml Sparkling Water (Citrus Free)
x 2 dashes Tonic Bitters

Method

1. In a pitcher, add your butterfly pea flowers and clear gin/non-alcoholic gin, leaving to infuse for 1-2 hours or until dark blue/purple. Then strain out the flowers and decant into a bottle.
2. Fill a copa glass with Polar Cube ice and add your sparkling water and bitters.
3. Serve with 50ml of the butterfly pea flower infused gin/alcohol-free gin to the side. When the time is right, pour the butterfly pea infusion into your copa glass and watch your He & T come to life!
