Share the refreshing taste of a classic Raspberry Mojito with 7 friends this summer with our delicious fishbowl recipe. Using a quick homemade mint syrup, these mojito's will have your guests craving seconds!

Ice Typepolar cube
x 1 bagPolar Cube ice
x 4 handfulsCrushed ice
x 4Limes (juiced)
x 300mlWhite Rum
x 1LSoda Water
For the Mint Syrup:x 2 cups Water, x 1 cup Sugar and x 1 cup Fresh Mint Leaves
Garnish: Mint Sprigs, Raspberries & Lime Wedges
1.For the mint Simple Syrup:
2.Over a medium high heat, bring the sugar and water to a low boil in a saucepan. Stir until the sugar dissolves and then simmer few more minutes without stirring.
3.When the mixture has reduced to half the amount you started with remove from the heat. Add the mint leaves to a bowl and pour the syrup over them and cover until cooled, sitting for around an hour before straining ready to use.
4.For the mojitos:
5.Muddle the raspberries in the bottom of your fishbowl with the mint simple syrup. Add the rum and lime juice then stir until combined. Add to the fridge to chill for at least 1 hour.
6.When ready to serve add the Polar Cube ice and soda water and stir gently.
7.Pour into glasses filled with Crushed Ice and garnish with a sprig of mint, a lime wedge and raspberries to serve.
