Fancy something a bit different in your pancakes? Why don't you try these deliciously boozy Prosecco pancakes, served best with sweet strawberries.

x 2kg bag of Party Ice
x 1 bottle ofProsecco
x 1tsp bicarbonate of soda
x 284ml carton of buttermilk
x 4tbsp prosecco
x 2 eggs
x 225g plain flour
x 2tsp baking powder
x 150g sugar
x 1 Punnet of Strawberries
1.Fancy trying something different this pancake day? Let your taste buds be engulfed by the classic combination we all know and love, in pancake form! In a large bowl, mix plain flour, baking powder and bicarbonate of soda then create a well in the middle of the mixture. In the well, add in the carton of buttermilk, 4tsp of Prosecco and break in two eggs, then beat the mixture until it is smooth.
2.Whilst Leaving the mixture to rest for one hour, ensure to put 150ml of prosecco to the side for your syrup and then chill the rest in a bucket of Party Ice.
3.When the mixture is ready, pour a small scoop of the batter into a hot, buttered pan and flip to ensure both sides are cooked perfectly – move it to one side and repeat until you've used all of the mixture.
4.Finally, it is time to make the showstopper (the Prosecco syrup). Add the sugar to the Prosecco in a pan and heat on a medium hob for 3 minutes, until it becomes noticeably syrupy. Stack the pancakes on a plate, and top them with strawberries (blackberries and raspberries are a delicious additional option) .
5.To finish, pour over the Prosecco syrup, ensure you have two ice-cold glasses of champagne to enjoy alongside!
