If you feel it’s too hot for a full-on roast, chicken can be the ideal solution. Cook this scrumptious roast chicken and pair with Jersey Royals and salad for a summer vibe, or veg and roasties for a more traditional roast.
Ingredients (serves 6-8)
1 whole chicken
Zest of 1 lemon
10 fresh thyme sprigs
100g butter
6 garlic cloves
Method
In a bowl, mix together the butter, zest of one lemon, the leaves from the thyme and the crushed garlic.
Make a small incision into the top of the chicken skin, between the two legs.
Stuff the lemon herb butter under the skin and roast as per instructions.
Enjoy!

Toad in the hole with vegetables – a classic British recipe
Simple yet delicious, a toad in the hole is yummy and quick to prepare. Top tip? Leave the batter to settle for around an hour before you use it, it’ll help get it beautifully fluffy. Oh, and don’t open the oven door when the batter is rising or you’ll have toad in the pancake!
Ingredients (serves 6)
12 chipolata sausages
1 red onion, finely sliced
1 tbsp. sunflower oil
2 large eggs
180ml semi-skimmed milk
Method
Mix the flour, eggs and milk into a batter. Leave to settle.
Sautee the onion in a frying pan until softened and then put aside.
Brown the sausages, before putting into an ovenproof dish with the onions.
Pour the batter over the sausages and cook for around 30 minutes, or until golden.
Serve and enjoy!
Serve with: A Bloody Mary or Rum Punch.

Veggie chickpea frittata
Catering for all tastes and preferences can be tricky, but this is one of the best Royal Jubilee recipes for pleasing everyone.
Ingredients
6 large eggs
1 can of chickpeas
2 peppers, finely chopped
1 onion, finely chopped
2 tsp’s smoked paprika
1 handful of baby spinach
Olive oil
Salt and pepper
Method
In a frittata pan, cook the onions and paprika in olive oil until soft.
Add the peppers and chickpeas, adding a touch of water if it’s needed.
When the ingredients have browned, pour in the beaten egg and a handful of baby spinach.
Season with salt and pepper.
Cook on a medium heat, scraping the mixture from the sides into the centre.
When the mixture has set in the pan, flip to cook the top, or put under the grill. Make sure you’re using a heatproof pan!
Serve hot or cold

A classic English summer dessert that’s ideal for a Platinum Jubilee party, the Eton mess is a taste sensation loved by many.
Ingredients (serves 4)
400g strawberries, cut into quarters
200g raspberries
4 meringue nests, broken into pieces
300ml double cream, lightly whipped
Method
Use the back of a fork to smash the strawberries and raspberries.
In a separate bowl, tip in the meringue and stir in the cream.
Gently fold in the crushed fruit, so you have alternating ripples of pink and white.
Serve in tall glass dessert bowls.

5. Easy choco mousse – the chocolatiest of Royal Jubilee recipes
One thing is for sure, you can’t go wrong with a chocolate-based desert. This easy dessert recipe takes just minutes to whip up, leaving you more time to focus on having fun.
Ingredients
160g dark chocolate, plus extra to serve
6 egg whites
2 tbsp golden caster sugar
5 tbsp crème fraîche
Method
Melt the chocolate in a glass bowl over a pan of boiling water.
Whisk the egg whites to soft peaks in a separate bowl.
Scatter in the sugar and keep whisking until you get stiff peaks.
Add a big dollop of egg white to the melted chocolate and mix fast and hard.
Gently fold the rest of the whisked egg whites into the chocolate mixture being careful not to knock out any air.
Spoon into 4 glasses and leave to set in the fridge for around 3 hours.
Serve each mousse with some crème fraîche and a few chocolate shavings.
