The time between Christmas and January payday can often feel like an eternity, and with the added pressure of the increased cost of living, it’s safe to say we’re all looking for ways to be savvier in the new year. The good news is choosing to be more conscious of your spending doesn’t have to mean that you miss out, especially not on a romantic date night! With Valentine’s Day fast approaching, we’ve pulled together some of our favourite Mediterranean recipes to bring you a three-course Greek date night (with wine) for under £30!

Starter - Tiropita (Feta wrapped in Filo Pastry):
Ingredients
x 2 sheets of Filo Pastry
x 2tbsp Olive Oil
x 1 block of Feta (cut in half)
Garnish: Honey and Sesame Seeds
Method
1. Lightly brush both sides of your filo pastry sheet with olive oil. Place one-half of the feta on top and wrap up before placing on a baking sheet. Repeat with the remaining feta and filo pastry.
2. Add to a preheated oven at 180 degrees until the pastry is golden brown and crispy.
3. To serve, drizzle the honey over the filo pastry and sprinkle sesame seeds on top.
Main- Chicken Gyros with Homemade Tzatziki:
Ingredients
For the Tzatziki:
x 1/3 of a Cucumber
x 2 Garlic Cloves
x ½ tsp Salt
x 1 tsp Olive Oil
x 245g Greek Yoghurt
x 1 pinch White Pepper
For the Gyros:
x 600g Skinless & Boneless Chicken Thighs
x 1tbsp Lemon Juice
x 4tbsp Greek Yogurt
x 1tbsp Olive Oil
x 2 Cloves of Garlic (minced)
x ½ tbsp Cumin
x ½ tbsp Oregano
x ½ tbsp Smoked Paprika
x ½ tbsp Cinnamon
x ½ tbsp Salt
x ½ tbsp Pepper
x 2 Greek Style Flatbreads
x ½ Red Onion (thinly sliced)
x 10 Cherry Tomatoes (halved)
x 3 Maris Piper Potatoes (cut into chips)
Method
For the Tzatziki:
1. Grate or use a food processor to finely chop the cucumber. Mix the chopped cucumber with half of the salt before adding to a cheesecloth or napkin and squeeze dry.
2. In a bowl, add the garlic with the remaining salt and olive oil and mix together, before adding the cucumber, yogurt and a pinch of pepper. Stir to combine.
3. Cover and refrigerate for at least an hour before serving. Remember to stir the Tzatziki again once you’re ready to serve.
For the Gyros:
1. Marinate the chicken by adding all ingredients (except the vegetables and flatbreads) to a large Ziplock bag. Squeeze together to mix all the ingredients well in the bag, before adding to the fridge to marinate for 1-4 hours.
2. Cut your potatoes into chips (leaving the skin on), and add to your air fryer with a splash of olive oil and a sprinkle of oregano, paprika, salt and pepper. Cook at 190 degrees for 15-20 minutes.
3. Preheat the oven to 200 degrees and add a roasting rack to a baking paper-lined oven tray.
4. Place the chicken on the rack and cook for 15-20 minutes or until the edges of the chicken start to crisp.
5. To make your gyros, roughly chop the chicken into smaller pieces and warm the flatbreads in the microwave for 20 seconds. Add a spoonful or two of tzatziki then top with the chicken before adding a few slices of onion, cherry tomatoes, and some chips.
6. Wrap your gyros up in baking paper for a more street food experience and serve your leftover chips and tzatziki on the side.
Dessert - Loukoumades (Greek Honey Doughnuts):
Ingredients
x 125g Self Raising Flour
x 1tbsp Granulated Sugar
x 1/2tsp Vanilla Extract
x 210g Greek Yogurt
Cooking Spray
Garnish: Honey & Cinnamon
Method
1. Add the flour, sugar, vanilla extract and yoghurt to a bowl and mix together.
2. Use your hands to knead until the ingredients are fully combined. Tear off pieces of the dough and form them into balls (recipe makes 16 dough balls).
3. Preheat the air fryer to 170 degrees. Then line with baking paper and add the dough balls ensuring none overlap.
4. Spray the dough balls with spray oil and air fry for 8-10 minutes, turning halfway through, until crispy and golden brown.
5. Finally, whilst they’re still warm drizzle generously with honey and sprinkle over ground cinnamon to serve.
