Sweet tooth? The best summer BBQ sharing desserts and Bottomless Cocktails

Summer and BBQs go hand-in-hand, as friends and family get together to enjoy delicious grilled food, refreshing bottomless cocktails, and sweet treats under the sun.

If you’ve got a sweet tooth and love indulging in desserts at your al-fresco gatherings, we have the perfect recipe inspo for you. Pair your favourite summer sweets with bottomless cocktails for the ultimate outdoor feast, all while keeping your drinks chilled with ice!

Sharing Margarita

Indulge in the ultimate shared cocktail experience with our Sharing Margarita recipe. This refreshing drink brings together the flavours of Cointreau, freshly squeezed lime juice, tequila, and a hint of agave syrup. Served ice-cold with our signature Super Cubes, this cocktail is guaranteed to be a crowd-pleaser.

Ingredients:

  • 200ml Cointreau
  • 200ml freshly squeezed lime juice
  • 400ml tequila
  • 60ml Agave Syrup
  • 3 Super Cubes
  • 1 handful of Party Ice

Garnish:

  • Lime wedges, lime zest and salt

Method:

  1. Combine all ingredients (except Super Cubes) in a pitcher and refrigerate until ready to serve.
  2. Zest a lime and mix with salt. Use a lime wedge to rim your glasses then dip into the salt mixture. Fill glasses with Super Cubes.
  3. Fill a shaker ¾ of the way full with Party Ice. Add enough margarita mixture to fill the shaker to the top of the ice. Shake well, then strain into your glasses. Garnish with lime wedge and enjoy!

Chocolate-Dipped Strawberry Kebabs

For a simple yet elegant BBQ dessert, look no further than chocolate-dipped strawberry kebabs. These bite-sized treats are the perfect combination of sweet and indulgent, making them a crowd-pleaser at any BBQ gathering. Pair these delightful kebabs with bottomless cocktails such as a creamy White Russian.

Ingredients:

  • Fresh strawberries
  • Dark or milk chocolate, melted
  • Skewers

Method:

  1. Thread strawberries onto skewers, leaving space at the bottom for holding.
  2. Dip each strawberry skewer into the melted chocolate, coating them halfway.
  3. Place the chocolate-dipped strawberry kebabs on a parchment-lined tray and let them set at room temperature or in the refrigerator until the chocolate hardens.
  4. Serve as a delightful and elegant dessert option at your BBQ gathering.

Blue Lagoon Fishbowl

Dive into a sea of refreshing flavours with this Blue Lagoon Fishbowl. This vibrant drink transports you to a tropical paradise with every sip. Crafted with a perfect blend of vodka, blue curacao, and lemonade, this cocktail is as visually stunning as it is delicious.

Ingredients:

  • 250ml vodka
  • 250ml blue curacao
  • 1l lemonade
  • 1 bag of Party Ice

Garnish:

  • Maraschino cherries and orange wedges

Method

  1. Add the vodka and blue curacao to your fishbowl and stir, then fill with half a bag of Party Ice. Add the lemonade and stir to combine.
  2. Garnish your jug with orange wedges and maraschino cherries.
  3. To serve fill your glass with Party Ice and pour the cocktail over the top, adding an extra cherry and orange wedge on top to serve. Enjoy!

Grilled Peach Crisp with Vanilla Ice Cream

Take advantage of the seasonal ripe peaches by making a grilled peach crisp topped with creamy vanilla ice cream – a winning combo!

Grilling the peaches caramelises their natural sugars and adds a smoky flavour that perfectly complements the sweet and crunchy topping. Serve this warm dessert with a generous scoop of vanilla ice cream for the ultimate treat! Pair with a summery Aperol Spritz or a classic Margarita.

Ingredients:

  • Ripe peaches, halved and pitted
  • Brown sugar
  • Flour
  • Butter
  • Cinnamon
  • Vanilla ice cream

Method:

  1. Preheat the grill to medium-high heat.
  2. Brush peach halves with a bit of melted butter and sprinkle with brown sugar.
  3. Place peaches on the grill, cut side down, and grill for 3-4 minutes until caramelised grill marks form.
  4. In a bowl, flour, brown sugar, cinnamon, and melted butter to create the crisp topping.
  5. Place grilled peaches in a baking dish and sprinkle the crisp topping over them.
  6. Grill the peach crisp indirectly on the grill for about 15-20 minutes until the topping is golden brown and crispy.
  7. Serve warm with a scoop of vanilla ice cream on top.

Remember, when making bottomless sharer cocktails, use our large Polar Cube ice or slow melting Super Cubes to ensure your drinks remain chilled all day!
