A Mojito isn't just for Christmas, it's for life! However this one just so happens to be a special Christmas Mojito, made with tart cranberry juice to add a festive twist on an all time summer classic.

x 2 HandfulsThe Crushed One
x 8-10Fresh Mint Leaves
x 25mlLime Juice
x 2tbspBrown Sugar
x 50mlWhite Rum
x 100mlCranberry Juice
Top Up:Soda
GarnishPomegranate Seeds & a Sprig of Mint
Method
1.Gently muddle the mint leaves (don’t shred them!), lime juice and sugar in the bottom of a highball glass then pour in your rum and stir.
2.Fill your glass halfway with the crushed one, then add your cranberry juice.
3.Fill the glass the rest of the way with ice and add a little bit of soda water to top up.
4.To serve, garnish with pomegranate seeds and a sprig of mint. Enjoy your Christmas Mojito!
